Not that I was complaining at all, we had yet more fish on the menu. The Signature Grilled Salmon Pasta, I thought, was excellent – served with a mild spicy creamed tomato sauce, topped generously with arugula.
If you appreciate good meat, then the Wagyu Rib Eye should tickle your fancy. With a high marbling grade of No.7, the melt-in-your-mouth cut is served with baked sweet potatoes and sautéed seasonal vegetables. Over the moooo-n, said my taste buds.
The final main for the night was the Moroccan Lamb Shank – slow-braised lamb shank with Moroccan spice, served with garlic mash and grilled asparagus. Slow-braising is always an excellent choice for lamb, keeping the meat succulent and tender.

A sweet end
As I battled to stay conscious from the night’s culinary endeavours, out came the sweets. Made for sharing the Trio Creme Brûlée come in Ginger, Coffee and Classic flavours, served in ramekins arranged neatly on a wooden tray. Neat.
For the hardcore romantics, I recommend the Romeo Y Juliet, a ‘love story on a platter’ – strawberry jellies with cookie crumbs and lemon curd. Beautifully plated, the dessert is light yet fulfilling.
Assuming you haven’t had enough for mains (ok, that’s nigh impossible), then you could opt for the Spicy Chocolate Lava – an indulgent chill-spiced chocolate lava cake served with Kahlua infused mascarpone and berries compote. Exceedingly good.
So a fantastic culinary adventure at Signature @ The Roof for those who enjoy premium East West fusion fare in a contemporary ambience. Some outstanding signature dishes to be found here with prices hovering around the mid-range to slightly upper. The great thing about The Roof is that after dinner you could walk up to Stratosphere on the rooftop to enjoy the view and music, and more drinks. Or you could order another Spicy Chocolate Lava.
